Fantastic clip Ken! I just watched it. I know you mentioned this approach to fresh tuna by Tetsuya before and I told some of my Japanese friends about it to their amazement and disbelief! Now I can show them the video. Well done to get that chat with Tetsuya. And the photo of you with your tuna catch is a classic!

i should add that i got the tuna fishing with gav platz off mooloolaba that morning. if anyone ever wants a crack at a top tuna or any other salt water fishing, gav's your man. contact him on gavin@tienfly.com.

whilst some of you may feel that was simply a shameless way for me to show off my tuna (in case you are one of the three people left in the southern hemisphere who have not seen it - did i mention it was caaught on fly?), it was fascinating to learn about tuna from the master. who would have thought it?
i had it up at noosa and we were all set to chop it up and hoe in. after that advice, i had to take the thing home and i ended up eating nothing but tuna for about two weeks. sashimi, tuna steaks, tuna salad, tuna casserole, you name it.
